- 1–1.5 kg pork belly, skin on
- 1–2 tbsp oil
- 2–3 tbsp Sweet Heat & Shenanigans (or your chosen OS&F rub)
- 1 tsp salt (for the skin only)
- Lemon wedges (optional)

- Dry the pork belly
Pat the skin completely dry. Moisture kills crackling. - Score or prick the skin
Shallow cuts or pin‑pricks help the fat render and the skin blister. - Season the meat side
Oil + rub on the underside only.
