FAQs

General

What is Outback Smoke & Fire?

We’re an Australian BBQ rub and seasoning company making bold, cheeky, flavour‑packed blends designed for real‑world cooking — from backyard grills to late‑night cravings. No fillers, no shortcuts, just big flavour and bigger personality.

You can read more about us on the About page.

Are your rubs made in Australia?

Yep. Small‑batch, hand‑crafted, blended right here in Australia using local and imported ingredients.

What makes your rubs different?

We build rubs for Australian cooking — hotter grills, faster cooks and people who don’t have 14 hours to babysit a brisket. Our blends caramelise fast, resist burning and deliver huge flavour without needing low and slow wizardry. If you want the deeper dive, check out What Makes Australian BBQ Rubs Different.

Do I need a fancy BBQ to use your rubs?

Nope. A $20 Kmart grill, a campfire or your oven will do the job.

Ingredients & Quality

Are your rubs all natural?

Yes. Every blend is 100% natural with no MSG, no preservatives, no additives and no weird stuff you can’t pronounce.

Are your rubs gluten free?

Absolutely — every single one.

Do your rubs contain MSG?

Nope. Just spices, herbs, salt, sugar and attitude.

Are your rubs vegan?

Most are. A few contain butter powder or honey powder. You can check ingredients on any product page in the shop.

Do your rubs contain allergens?

Most OSF rubs are free from common allergens. A few blends contain butter powder or honey powder. Every product page lists full ingredients so you can check at a glance — just head to the shop and open any blend.

Are your rubs low sugar or low salt?

Our blends use sugar and salt for balance, caramelisation and flavour. Some rubs taste sweeter or saltier than others, depending on the spices in the mix. If you’re watching sugar or salt, the best way is to choose blends based on flavour profile — buttery, herbal or smoky blends tend to feel lighter, while sweet or spicy blends can taste richer.

How spicy are your rubs?

Heat levels vary — from mild and buttery to “question your life choices”. You can see the chilli scale on Fixes Most Things, Too Hot for Common Sense, Zesty Slap and Sweet Heat & Shenanigans.

Can kids eat your rubs?

Absolutely. Many blends are mild and family‑friendly. Kid‑safe options include Fixes Most Things, Butter Me Up and Herbalicious Rubdown.

Using the Rubs

How do I apply BBQ rub properly?

Dry the meat, oil if needed, season like you mean it, let it sit and stop fiddling with it. There’s a full guide here: How to Apply BBQ Rubs Properly.

How much rub should I use?

More than you think. If you can still see the meat, you’re not done. You can see examples in How Much BBQ Rub to Use.

Can I use your rubs on vegetables?

Absolutely — corn, mushrooms, potatoes, pumpkin, zucchini, cauliflower… they all love a good rubdown. There’s a full breakdown in Best BBQ Rubs for Vegetables.

Can I use your rubs on seafood?

Yes — especially prawns, salmon and whole fish. You can see recommended blends in Best BBQ Rubs for Seafood.

Can I use your rubs as a marinade?

Yes — mix the rub with a splash of oil, yoghurt or citrus to turn it into a quick marinade. For tips on how rubs behave with moisture, check How to Make BBQ Rubs Stick Better.

Do your rubs work in air fryers?

They work brilliantly. Air fryers caramelise sugars fast, giving you crispy, flavour‑packed edges.

Do your rubs work on smokers, grills and ovens?

Yep. Gas, charcoal, pellet, oven, campfire — if it gets hot, our rubs get happy.

BBQ Science & Technique

What is BBQ bark and how do I get it?

Bark is the dark, sticky, flavour‑packed crust on smoked meat. You can learn how to build proper bark in Science Behind BBQ Bark.

Why does my rub burn?

Your heat is too high or too direct. The full explanation is in Why Does My Rub Burn?.

Why isn’t my rub sticking?

Your meat is too wet. You can fix that with the tips in How to Make BBQ Rubs Stick Better.

Storage & Shelf Life

How long do your rubs last?

Most OSF rubs stay at peak flavour for 18–24 months when stored correctly — cool, dry, sealed and out of direct sunlight. Some blends with citrus oils or delicate herbs may peak a little earlier, while blends with deeper spices and sugars tend to hold their flavour longer. If you want the full breakdown, there’s a guide here: How to Store BBQ Rubs.

Do I need to refrigerate them?

Nope. Just keep them sealed and away from moisture.

How should I store them after opening?

Keep them sealed, dry and out of direct sunlight. A pantry or spice drawer is perfect. More tips are in How to Store BBQ Rubs.

My rub clumped — is it still good?

Yes. Clumping is normal for natural rubs because we don’t use anti‑caking agents. A quick shake or fork will break it up.
